Gourmet Nachos

This a a healthy (or less unhealthy, at least!) version of the classic quick snack/meal.

Use REAL Cheese, Never Velveeta!!!


1 box Zatarain's rice mix (we use black beans & rice)

Prepare rice according to box directions.

Tortilla Chips (large/regular chips)
1 lb ground venison (use the ground meat of your choice!)
1 tsp cayenne
1 1/2 tsp turmeric
1 1/2 tsp cumin
pinch sea or pink salt

Rue (cheese topping)
2 Tbsp flour
2 Tbsp butter
1 1/2 c milk
8 oz shredded chedder (or blended) cheese

Toppings:
Shredded Lettuce
Salsa
Jalapenos (fresh or pickled)
Sour Cream
Guacamole

Instructions:

Rice:
Prepare Zattarain's according to box. While cooking rice, saute burger and prepare remaining ingredients.

Burger:
Brown burger well in an oiled skillet with cayenne, turmeric, cumin, and salt. Brown until any blood is gone and pink first disappears.

Rue:
To prepare real cheese topping, first melt 2 Tbs butter over medium heat. As soon as butter melts, add 2 Tbs flour, whisking until combined and thickened. Slowly add milk, whisking constantly. When rue begins to thicken, add cheese. stir until blended. Reduce heat (move to warming burner if you have) and stir occasionally to keep warm until serving.

Serving:
Cover plates with tortilla chips. Cover with cheese topping, then rice, then meat. Repeat entirely for 2-3 layers. Top with shredded lettuce, salsa, and jalapenos. Complete with dollops of sour cream and guacamole. Serve Immediately. Serves 4-6.

NOTE: Go the extra mile and make this with the real cheese rue. It is MUCH better. Just be sure to serve quickly if you want the cheese to stay gooey and chips to stay crisp!
