No Fail Hollandaise Sauce

To save you the risk of "breaking" the sauce, this easy recipe uses mayo instead. Just be sure to use real mayo.

A Tried and True Method To Make The Classic Sauce


3 Tbsp butter
1 Tbsp water
3 Tbsp Mayonnaise (not Miracle Whip)
Lemon Juice to taste (approx 2-4 tsp)

Optional:
pinch Cayenne pepper, or
pinch white pepper, or
1 tsp Dijon Mustard

Add butter to small sauce pan and melt on medium heat. Add water and mayonnaise. Whisk constantly until all ingredients are mixed well. Add lemon juice (to taste) and reduce heat to low. Reduce on low for about 10 minutes or until the sauce begins to thicken. If sauce is not thick enough, add additional butter.

If you are looking to perk up the flavor, simply add a pinch of Cayenne or white pepper or a teaspoon of spicy mustard. This sauce goes excellent over cooked veggies, over spinach, over venison/ chicken or beef, mixed with noodles and a little parsley or anything else that calls for Hollandaise.
