Oven Roasted Vegetables

A Great Alternative to Steaming


Olive Oil
2 Tbsp butter, melted
2 medium chopped onions
2 medium kohlrabi
4 carrots
2 zucchini/summer squash sliced
4 med  potatoes, cubed or new potatoes, halved
2 med beets
4 radishes
salt and pepper to taste
parsley thyme and/or oregano
fresh grated Parmesan (optional)

*Use any combination of vegetables. Those listed are ones that are readily available and provide a good mix of flavors.

Preheat oven to 375. In a large mixing bowl, combine vegetables and drizzle with olive oil and butter. Add herbs.  Pour into baking dish and spread evenly. Sprinkle salt and generous amount of pepper. Place in oven and roast for 30-40 minutes, or until all vegetables are fork-tender. Remove from oven and sprinkle with fresh grated Pamesan (optional). Serve as your main dish or as a side. Makes 4-6 servings.
